Meriden School
The Meriden School canteen redevelopment creates a safer, faster, and more intuitive foodservice environment for students and staff alike. The challenge was to transform a high-traffic, peak-period space into a calm, efficient service zone that supports healthy-food initiatives, compliance requirements, and the operational needs of a modern independent school. The resulting layout balances educational priorities with commercial kitchen performance, delivering a canteen that is functional, welcoming, and future-ready.

CONCEPT
The concept phase focused on understanding Meriden School’s food offering, expected meal volumes, supervision requirements, and the need for streamlined queuing during busy breaks. Early planning defined core adjacencies, such as preparation, cooking, cold storage, servery, and cleaning, anchored in a linear, one-way flow to support staff oversight and reduce student congestion. Safety, hygiene, and accessibility (including counter heights and circulation widths) were established as foundational design drivers.

SCHEMATIC
Schematic layouts refined the relationship between back-of-house production and front-of-house student movement. Kitchen zoning was developed to separate raw preparation from cooking and plating, while the servery was configured to maximise visibility, encourage quick selection, and keep queues moving. Clear sightlines enable staff to supervise service and maintain food safety. Storage and cold rooms were positioned to allow for rapid restocking without interrupting service, and lighting and acoustics were tuned to create a calm, student-friendly atmosphere.

IMPLEMENTATION
Implementation involved finalising equipment schedules, mechanical ventilation, hydraulic requirements, and all food safety–driven specifications. Bench heights, slip-resistant flooring, hand-wash stations, and compliant materials were selected to meet NSW health regulations and withstand the rigours of daily school service. Coordination with builders ensured precise integration of electrical loads, plumbing provisions, refrigeration systems, and exhaust paths. Finishes were selected for durability and ease of cleaning to support long-term operational resilience.

FINALISATION
Finalisation included overseeing construction works, equipment installation, and commissioning to verify that all systems, such as ventilation, refrigeration, hot-line equipment, and cleaning facilities, performed as intended. The completed canteen delivers smooth circulation, reduced queuing pressure, and improved staff workflow. Final quality checks ensured compliance with food safety, accessibility, and operational standards, giving the school confidence that the canteen is designed to meet both daily and peak-service demands.
Project Details
The new Meriden School canteen offers a balanced blend of efficiency, safety, and student-centred design. Dedicated kitchen zones prevent cross-traffic and support ergonomic staff workflows, while modern appliances and well-lit prep areas enable faster production at consistent quality. The service counter has been configured for clear, independent student choice, with refrigerated displays, grab-and-go sections, and POS areas designed to keep queues moving even during large recess waves.
Behind the scenes, optimised cold and dry storage improves stock management, while dishwashing and waste areas are kept separate from the main flow to preserve hygiene. Ample circulation space ensures staff and volunteers can move freely, and finishes were selected to withstand high use with minimal maintenance. The result is a canteen that not only supports day-to-day school operations but also enhances the overall student experience.
