El Primo Sanchez at The Rose Hotel, Paddington, channels the colour, rhythm, and energy of Mexico City into a tightly resolved bar environment built for speed, theatre, and late-night hospitality. The challenge was to craft a compact yet high-performance layout that could support fast cocktail production, intimate social interaction, and the venue’s signature playful personality, all without compromising operational efficiency or compliance. The resulting space blends bold visual identity with disciplined back-of-house logic, ensuring the bar performs as well as it looks.
CONCEPT
The concept phase defined the venue’s character and operational intent: a vibrant, Latin-inspired cocktail bar with a strong sense of place, aimed at guests seeking immersive atmosphere, expressive drinks, and lively social energy. Early workshops clarified the drink program, speed-rail requirements, patron capacity, service style, and the desired relationship between bar theatre and guest proximity. This stage established the narrative that would guide every spatial and functional decision.
SCHEMATIC
Schematic design translated the creative brief into spatial logic. We positioned the bar prominently to anchor the room, optimising bartender ergonomics with a tight triangle between ice wells, refrigeration, and prep equipment. Seating arrangements were shaped to encourage movement, mingling, and visual connection to the bar’s activity. Backbar storage, batching areas, glass washing, and circulation paths were mapped to minimise unnecessary steps during peak service while maintaining compliance with fire and building codes. Early 3D views helped test sightlines, lighting tone, and the balance between intimacy and vibrancy.
IMPLEMENTATION
Implementation focused on refining construction details, specifying equipment, and coordinating mechanical, hydraulic, and electrical services. Refrigeration loads, drainage positions, and extraction needs were aligned with the venue’s high-intensity cocktail menu. Materials were selected for durability in a busy bar environment (non-porous surfaces, protected corners, and easy-clean finishes), while preserving the rich aesthetic palette inspired by Mexico City’s nightlife culture. Contractor queries were resolved quickly to maintain design intent and reduce on-site variations.
FINALISATION
Finalisation ensured seamless delivery: verifying set-outs, confirming accurate equipment installation, checking line-of-sight lighting levels, and validating compliance with hospitality, health, safety, and liquor licensing requirements. The completed venue delivers a cohesive, high-performance bar where spirited atmosphere and operational precision coexist effortlessly. El Primo Sanchez now functions as a standout destination within The Rose Hotel—energetic, expressive, and purpose-built for memorable nights.
Project Details
The design supports both operational speed and atmospheric richness. Cold storage and prep areas are tucked behind the bar to maintain a compact footprint, while bartender workstations are designed to minimise overlap during busy periods. The backbar ladder system and shelving enable curated spirit displays and rapid bottle retrieval. Layered lighting, patterned tiles, and warm timbers contribute to the Mexico City narrative without overwhelming the room’s workflow.
Circulation routes were carefully designed around entry points, POS placement, and guest-congregation zones, ensuring the venue remains lively without becoming congested. The bar is engineered to handle high-volume cocktail service, batching, and rapid glass turnover while providing guests with an up-close view of the craft of mixology.
