Winmalee Public School
The Winmalee Public School canteen required a layout that balanced safety, supervision, and speed during peak break times. The goal was to create a space where students could move confidently through the service line, while providing staff and volunteers with a clean, hygienic, and highly functional environment for preparing and serving fresh meals. The resulting design supports smoother daily operations while aligning with school regulations and modern food safety standards.

CONCEPT
The concept phase focused on understanding the daily rhythm of a primary school canteen: short, high-pressure service bursts, young students who need clear visual cues, and a team of volunteers who require an intuitive, low-risk work environment. Early consultation defined menu simplicity, equipment needs, and compliance with NSW school and council food safety guidelines.

SCHEMATIC
The schematic plan established a clean, linear workflow: storage, prep, cook/heat, pack/serve, and wash-up. Zones were configured to minimise cross-movement and ensure staff could work safely while keeping students visible at all times. Stainless-steel benches, separate raw and cooked areas, and appropriately rated ventilation were integrated into CAD layouts, ensuring a practical and compliant canteen that stakeholders could review easily.

IMPLEMENTATION
Implementation involved coordinating with NSW authorities for building, plumbing, and fire safety approvals, and preparing hydraulic and ventilation documentation suitable for school-based governance. Accessibility, durability, and easy-to-clean materials shaped all selections. Installation of benches, servery counters, refrigeration, and small appliances was staged to minimise disruption to school operations.

FINALISATION
Final checks confirmed compliance with hygiene standards, proper equipment installation, and safe circulation paths for students and staff. The upgraded canteen now offers shorter service windows, improved supervision, and a calmer, more controlled flow during busy recess and lunch periods. Staff training was followed to ensure all operational practices aligned with the new layout.
Project Details
The Winmalee Public School canteen redesign prioritised simplicity, speed, and safety; three essential elements for any education-sector food environment. The previous setup created congestion during peak periods and made it difficult for volunteers to manage both workflow and supervision. By introducing a clear entry queue, a low, visible servery counter, and a defined exit path, the design immediately reduced confusion and improved the student experience.
Behind the counter, storage areas were consolidated, allowing volunteers to quickly access ingredients without entering the prep or wash-up zones. Prep benches were widened to create safe working distances, and handwash points were placed where staff naturally stopped between tasks, reducing the risk of contamination. Refrigerated display cabinets were integrated at the front, helping students make healthier choices by increasing visibility of fresh and pre-ordered meals.
Lighting was upgraded to improve both food presentation and staff visibility, while finishes were selected for durability and fast cleaning, critical in a school environment with high daily use. This project demonstrates how thoughtful, education-specific foodservice design can elevate both the student experience and canteen productivity within a compact, highly regulated space.
