Vinnies (Nagle Centre)
A complete redesign of the kitchen and bar to improve workflow, increase output capacity, and bring the authentic theatre of Italian cooking to the forefront of the dining experience.

CONCEPT
The concept phase focused on understanding the unique operational model of a community kitchen: high throughput, diverse volunteers, strict safety requirements, and the need for clear zoning that minimises cross-traffic. Early assessments of the site, utilities, and menu patterns informed a practical foundation for workflow and equipment planning.

SCHEMATIC
The schematic layout mapped a logical, linear flow: raw storage, prep, cooking, plating, and dishwashing, reducing cross-contamination risk and improving service speed. Zones were defined for dry storage, refrigeration, wet preparation, hot-line cooking, and cleaning. Mechanical, hydraulic, and electrical requirements were integrated early to ensure the kitchen could safely and reliably support sustained daily production.

IMPLEMENTATION
Once rough-ins for plumbing, gas, electrical, and ventilation were coordinated, the fit-out progressed through staged installation of walls, durable flooring, stainless-steel prep benches, commercial appliances, and compliant exhaust systems. Equipment positioning was refined onsite to ensure accessibility for volunteers and efficient circulation during peak service periods.

FINALISATION
Finalisation involved securing approvals for food safety, BCA, and fire safety from NSW authorities. Detailed hydraulic and exhaust documentation ensured full compliance, while site inspections confirmed clearances, access ways, and hygiene support systems were built as intended. The completed kitchen now provides a safe, organised, and resilient environment that supports Vinnies’ mission to serve the community.
Project Details
The Vinnies Nagle Centre required a kitchen design capable of handling both volume and variability. Unlike typical hospitality kitchens, the space required to support volunteers working at different speeds and comfort levels informed the decision to separate wet and dry prep areas, widen circulation paths, and specify durable, easy-to-clean surfaces. The zone-style layout ensures ingredients move through each phase—receipt, storage, preparation, cooking, plating, and washing—without backtracking or creating bottlenecks.
Ventilation and lighting were engineered to improve safety and comfort across long service windows, while accessible handwashing stations and clearly positioned cleaning points reinforce hygiene. Equipment was installed to minimise cross-contamination between raw and cooked foods, and cold storage was optimised for bulk deliveries and batching. Together, these decisions created a kitchen that supports consistent, high-volume meal production while reducing fatigue, improving safety, and empowering the Vinnies team to operate with confidence.
