Vanilla Blue Catering & Events
The Vanilla Blue Catering & Events production kitchen and bakery required a layout capable of supporting high-volume output, rapid turnaround, and uncompromising food quality. Their previous setup struggled with fragmented workflows, limited storage access, and bottlenecks during peak catering periods. Our redesign reorganises the entire environment into a finely tuned production engine, purpose-built for efficiency, safety, and consistency across daily catering, bakery operations, and large event orders.

CONCEPT
The concept phase focused on defining Vanilla Blue’s operational identity: diverse event types, fluctuating production volumes, bakery throughput, and delivery logistics. By mapping core menu families (from pastries and breads to hot entrées and plated catering items), we created a functional narrative that shaped the zoning strategy. Early conceptual work prioritised separating bakery and savoury production while ensuring both operations could scale without workflow conflicts.

SCHEMATIC
Schematic design established the backbone of the production kitchen: a continuous, one-directional food flow from receiving, to storage, to prep, to cooking/baking, to plating, to dispatch. CAD layouts refined critical adjacencies, including: A dedicated bakery wing with dough prep, proofing, and oven stations Production cookline sized for batch cooking and event-menu flexibility Strategic placement of walk-in coolrooms, dry storage, and ingredient access points A dispatch zone positioned for rapid packing and seamless loading 3D visualisation allowed the client to preview staff circulation, equipment footprints, and workflow clarity before committing to construction.

IMPLEMENTATION
During implementation, equipment selection and services coordination were finalised to support high-capacity production. Key integrations included: High-output bakery ovens and mixers Multi-purpose cooking equipment for simultaneous hot and cold production HACCP-aligned benches, sinks, and dedicated cleaning stations Ventilation designed for continuous heat and humidity loads Optimised drainage, electrical, and refrigeration capacity for round-the-clock operations This phase ensured that every appliance, service point, and workspace could support Vanilla Blue’s volume demands while maintaining strict food safety compliance.

FINALISATION
Finalisation involved close collaboration with contractors and trades to ensure the built environment matched the design intent. We reviewed shop drawings, validated critical clearances, supervised equipment placements, and resolved service conflicts early. Final sign-off confirmed workflow logic, temperature-controlled storage, bench ergonomics, and the readiness of the dispatch zone for daily catering cycles. Once operational, the facility performed exactly as modelled: streamlined, scalable, and resilient under high load.

The completed production kitchen and bakery for Vanilla Blue Catering & Events integrates two distinct yet interconnected operations into a layout engineered for efficiency. The bakery benefits from a dedicated production spine: ingredient storage, dough handling, proofing, and baking, supported by linear benching and carefully modelled equipment spacing to enable safe, simultaneous workflow by multiple staff.
The savoury production kitchen features expanded prep surfaces, zoning that separates raw and cooked processes, and a cookline configured for batch cooking without backtracking or cross-traffic. Walk-in refrigerators are positioned to reduce travel time during peak prep periods, while dry storage is centralised to support both bakery and catering teams.
A purpose-built dispatch zone enables rapid dispatch of packed orders, reducing bottlenecks during morning and afternoon delivery runs. The entire facility now operates as a cohesive production ecosystem that supports quality, consistency, and capacity for future growth.
