Peninsula Villages
The Peninsula Villages aged care kitchen has been designed as a compliant, future-ready foodservice environment that supports the safe, nutritious delivery of meals to residents with diverse dietary and clinical needs. The challenge was to create a layout that upholds rigorous food safety and infection control protocols while maintaining efficient workflow for staff and ensuring operational resilience across multiple service periods each day. The resulting design balances regulatory precision with everyday practicality, supporting high standards of resident care and staff performance.

CONCEPT
The concept stage focused on understanding resident volumes, dietary profiles (including texture-modified and allergy-sensitive meals), meal production systems, and the facility's preferred operational model—cook-fresh, cook-chill, or hybrid. We assessed existing site constraints, staff circulation paths, and the aged-care regulatory environment, including FSANZ requirements, local council expectations, and Aged Care Quality Standards. Early planning established a foundation for a one-way, contamination-controlled flow from goods receiving through preparation, cooking, plating, distribution, and warewashing.

SCHEMATIC
Schematic layouts organised the kitchen into clearly defined, hygienically separated work zones: temperature-controlled storage, vegetable and protein preparation areas, hot production lines, plating benches, and dedicated dishwashing and waste management spaces. Finishes, bench heights, and circulation paths were refined to support ergonomics and safe movement for staff over long service periods. Consideration was given to meal distribution trolleys, texture-modified meal workflows, and the need for monitored holding equipment. Plans also included allowance for staff amenities and PPE stations to support infection-prevention guidelines.

IMPLEMENTATION
Implementation finalised equipment schedules, materials, mechanical and hydraulic coordination, and precise service connection requirements. Refrigeration was specified for continuous temperature control; hand-wash stations and segregation points were strategically placed to support hygiene protocols; and all finishes were selected for durability, non-porosity, and ease of cleaning. Documentation ensured alignment with health regulations, aged care accreditation conditions, and council DA requirements. Technical reviews minimised scope gaps and construction ambiguity, enabling smooth installation and effective commissioning of meal production systems.
FINALISATION
During finalisation, the team resolved site queries, inspected service set-outs, and validated materials and equipment against compliance and performance benchmarks. Final checks confirmed a safe workflow separation, correct utility installation, and provisions for future scalability. The completed kitchen delivers a stable, hygienic, and efficient environment that supports residents’ well-being through reliable daily meal production while providing staff with a safe, structured workspace.

Storage is managed through temperature-controlled rooms that limit exposure risks, while preparation areas are zoned to separate raw and ready-to-eat workflows. Hot production lines support consistent, high-volume meal output, including specialised dietary items such as fortified, minced, and pureed meals. Dishwashing is positioned away from preparation areas to maintain hygiene barriers, and waste systems are integrated to streamline sanitation.
The kitchen accommodates mobility needs and provides ergonomic working heights, slip-resistant flooring, and clear line-of-sight supervision. Equipment selection prioritises reliability and ease of cleaning, while the layout allows for future menu adaptations, increased resident capacity, or changes to foodservice models. The final result is a safe, compliant, and resilient kitchen that enhances culinary quality, reduces operational stress, and supports aged care teams in delivering consistent, resident-centred service.
