The production kitchen for RADHE was designed to support fast, high-output preparation of Indian snacks and chaat components within a compact footprint. With intense peak-hour activity, spice-heavy cooking processes, and a wide variety of wet and dry prep tasks, the client required a kitchen that could deliver uncompromising workflow efficiency, food safety, and staff mobility. The final design transforms a tight space into a high-performance production environment that supports consistent daily production volume while preserving the authenticity of RADHE’s flavours.

CONCEPT

The concept phase focused on consolidating the diverse production requirements of a chaat-based menu into a cohesive operational system. This involved mapping how ingredients such as potatoes, lentils, spices, curd, chutneys, and puris move through the space, identifying capacity targets, and establishing strict zoning to separate wet, dry, and high-risk cooking activities. Early assessments also confirmed the need for high-capacity washing points, rapid-cycle prep benches, and equipment selections robust enough for continuous production.

SCHEMATIC

The schematic layout divides the kitchen into five functional zones: receiving and storage; wet prep for washing vegetables and soaking components; dry prep for spice handling and batch assembly; a central hot line for frying, tempering, and cooking; and a dedicated plating/packing zone for assembling chaat portions. Circulation paths were organised into a logical U-flow to allow staff to move from storage to prep to cooking without crossing paths. Clearances of at least 1.2 metres were preserved to support dense staff movement during peak demand.

IMPLEMENTATION

Implementation centred on selecting equipment capable of handling high-volume, high-frequency production: industrial chutney mixers; heavy-duty fryers for puris and samosas; commercial steamers; stainless steel worktables; and blast chillers for rapid cooling. Gas, electrical, and hydraulic services were coordinated around a central cooking island to reduce congestion. Fire suppression systems were installed above the fryers, and powerful ventilation hoods were specified to manage fumes from spices.

FINALISATION

Finalisation refined the workflow into a zone-based production line designed for speed and consistency. Refrigerated storage for yogurt and garnishes was positioned at the plating zone, while waste and cleaning stations were placed at the perimeter to prevent cross-traffic. Compliance, food safety, and ergonomic positioning were validated before handover, ensuring the kitchen could deliver continuous, high-volume output with minimal downtime and maximum operational clarity.

Project Details

The RADHE production kitchen required a unique balance of cultural authenticity, high throughput, and technical precision. Chaat production is inherently multi-stage (boiling, frying, tempering, cooling, and assembling) and often requires simultaneous tasks performed by multiple staff members. The challenge was to compress these workflows into a compact footprint without compromising speed or safety.

To address this, the design adopted a hybrid galley-and-island layout, placing the hot line at the centre so the production team could work around it efficiently while maintaining clear sightlines and communication. Wet prep was intentionally positioned closer to storage to reduce water-carrying distances and minimise slip risks. Dry prep, where spices and crispy elements are handled, remains separate to prevent moisture cross-contamination, which is critical for maintaining texture and shelf life.

Lighting and ventilation were given strong emphasis due to the intensity of spice frying and tempering. Non-slip flooring and durable stainless-steel finishes ensure the space is easy to maintain, even during back-to-back service periods. Every selection, from equipment capacity to surface materials, was made to support RADHE’s production goals: rapid turnaround, consistent product quality, and a safer, calmer work environment during the busiest hours of operation.
