BASTA Trattoria
BASTA Trattoria combines relaxed Australian dining culture with the warmth of a modern Italian pizzeria. Nestled within Hotel TOTTO in Wollongong, the venue required a foodservice layout that delivered theatre, pace, and consistency while retaining the intimate, buzzing atmosphere that defines the guest experience.

CONCEPT
We established the overarching spatial narrative for BASTA: a front-facing bar that frames arrival, a compact yet high-output trattoria kitchen, and a seamless visual connection between the two. The goal was to create an energetic dining flow where cocktails, pizzas, and shared dishes move effortlessly through service.

IMPLEMENTATION
With the spatial engine defined, we introduced operationally specific equipment: bar refrigeration, sinks, dump stations, and mixology tools; pasta cookers, wood-fired ovens, stainless prep benches, and dedicated plating zones for the kitchen. Every set-out supported speed, safety, and the lively rhythm of a trattoria during peak periods.

FINALISATION
The final package integrated coordinated drawings, equipment schedules, and workflow-aligned layouts ready for approvals and fit-out. This ensured the built space protected the design intent: delivering a kitchen and bar environment that supports BASTA’s Mediterranean-inspired menu and high-tempo hospitality experience.
Project Details
BASTA Trattoria required a design approach that balanced authenticity, efficiency, and atmosphere. The bar acts as both a welcoming gesture and a high-performance service hub, positioned to handle aperitivo, cocktails, and quick-turn beverage orders. Behind it, the kitchen was designed to support two hallmark operations: a pasta line requiring rapid-fire boiling, finishing, and plating, and a wood-fired pizza program requiring high heat, airflow, and uninterrupted movement between prep and the oven.
The schematic planning brought clarity to a tight space by reducing unnecessary staff travel and preventing crossover between hot, cold, and service functions. Equipment positioning, such as placing the wood-fired oven where diners could see it, reinforced the trattoria’s theatre while enhancing workflow efficiency.
From concept through handover, the project was shaped around real operational behaviour: high weekend volumes, fast drink pacing, coordinated pizza/pasta production, and an emphasis on warmth, comfort, and brand character. The result is a venue where design, service, and atmosphere work in concert to support the essence of Hotel TOTTO’s hospitality offering.
