BAPS
The BAPS Temple production kitchen has been designed as a large-scale, culturally aligned foodservice environment that supports the preparation of thousands of vegetarian meals for worshippers, volunteers, and community gatherings. The challenge was to create a layout that adheres to strict sattvic food practices while enabling efficient, high-volume output and maintaining strict separation between clean, raw, cooked, and wash-up processes. The resulting kitchen balances operational discipline with modern safety, hygiene, and compliance standards, ensuring reliability for both daily operations and major spiritual events.

CONCEPT
The concept phase focused on defining production capacity, understanding religious food-handling protocols, and identifying the required sequencing for sattvic vegetarian cooking. Early planning mapped a linear workflow, from receiving through prep, cooking, hot holding, and wash-up, to minimise cross-traffic and maintain purity standards. Stakeholder consultations with temple leaders and engineers clarified equipment needs for large vessels, high-capacity boiling, and continuous meal service during community events.

SCHEMATIC
Schematic planning developed clear zoning to support volume and compliance: dry storage for grains and pulses; cold rooms for dairy and perishables; vegetable prep areas with adequate washing stations; centralised cooking hearths for oversized pots and steam kettles; and an isolated wash-up zone to prevent cross-contamination. Circulation widths were expanded to accommodate team movement during peak production. Ventilation, drainage routes, and access points were refined to support heat removal, safety, and ergonomic work patterns.

IMPLEMENTATION
Implementation focused on detailing the placement of heavy-duty equipment, including large gas burners, industrial mixers, and multi-sink wash lines. Technical drawings finalised three-phase power requirements, gas reticulation, floor waste placements, and high-capacity exhaust systems suited to constant simmering, boiling, and steaming. Regulatory submissions ensured compliance with food safety, fire, and accessibility standards applicable to institutional-scale production kitchens. Materials were selected for durability, ease of cleaning, and long-term operational reliability.

FINALISATION
Finalisation included inspections and sign-offs for hygiene, fire isolation, safe access, and service integration before commissioning. Equipment testing confirmed that boiling stations, deep prep zones, and hot-holding infrastructure operated cohesively under high-load conditions. The completed kitchen now supports seamless production for thousands of meals, enabling volunteers and staff to prepare offerings efficiently while maintaining the cultural and religious standards essential to temple operations.
Project Details
The BAPS production kitchen is a purpose-built environment for large-scale batch cooking. The layout emphasises a strict separation of processes—raw vegetable washing is kept apart from finished food holding, and dedicated wash-up areas prevent utensils from re-entering clean zones. Large cooking vessels are arranged around a central island to reduce movement between prep, cooking, and plating. At the same time, generous benching and stainless steel finishes allow multiple volunteers to work simultaneously without congestion.
Dry storage and cold rooms support rapid restocking during festivals and heavy attendance periods. Ventilation systems are engineered to manage heat and steam generated by large-batch cooking, and floor drainage is integrated to accommodate frequent washdowns and hygiene routines. The result is a high-performance kitchen that blends cultural sensitivity with modern engineering—supporting daily temple activities and major community celebrations with reliability and ease.
